El Supremo 8 ans 40°: Description and customer reviews

El Supremo 8 ans is a Paraguayan rum from the Capasa distillery. As is often the case in this South American country, it is produced from cane honey. This cane juice syrup is the equivalent of the battery syrup found in the West Indies. The Americans call it "grade A molasses", which refers to the molasses obtained after the first stage of sugar refining.

It is matured twice. For the first 4 years, it is placed in incensio ("yvyrá payé") casks, a highly aromatic, pinkish-colored noble wood whose essences are used in perfumery. The name incensio means "incense" in Spanish.

At the end of these 4 years, it is transferred to more "classic" French oak barrels for a further 4 years.

Nico's tasting notes

The nose is heavily aromatic, with an extremely buttery, gourmand profile. Soft wood and butterscotch are one and the same in this dense, velvety rum.

Aeration opens up the rum, introducing seductive vegetal notes that bring us closer to cane. A certain freshness is also introduced, giving fullness to the deeply gourmand side of the first nose. Finally, pepper adds a lovely relief that completes the overall balance.

The palate maintains the balance of the nose, with a slightly spicy, vegetal attack that never loses its roundness. The velvety cane is dressed in a silky ribbon of sweet spices. More than a glimpse of tonka bean, followed by cinnamon, nutmeg and green, almost candied aromatics.

The finish is sweet and caramelized, and surprises us with deep notes of fermented cane juice.
