Emperor Deep Blue Palo Cortado Finish 40° is a unique experience led by the Mauritian brand. This island is fortunate to know how to produce both pure cane juice rums and molasses rums. Emperor takes the opportunity to offer us this blend of 40% pure juice rum (aged 12 years) and 60% molasses rum (aged 5 to 7 years). The rums were combined then put in old Palo Cortado sherry barrels for an additional 8 months.

And this is where the experience gets crazy, since once bottled, the rum was lowered 60 meters deep, into an underwater cellar off the coast of Brittany. For 10 months, in the dark, at a temperature of 10 to 13°C, without oxygen and with 6 bars of pressure, the rum bottles acquired a unique profile and appearance.

Nico's tasting notes

The nose shows all the characteristics of sherry cask at first sight. It's a teeming profile of walnut, wood, sulfur and gunflint. Between the meshes of this tight net, a few scarves of sweet fruit manage to make their way.

Aeration removes the woody notes, revealing a deep rum, marked by dark, fleshy fruit, like a dark, candied plum. A few flashes of freshness and fruit emerge from time to time, and we appreciate these exotic splashes of banana and papaya.

The palate is that of a well-concentrated molasses rum, with accents of leather, truffle and ripe licorice wood. The palate is then rounded, with honeyed flavors, like a sweet white wine.

The finish sees the return of the sherry cask and its almost mineral flavors.
