Emperor Deep Blue Sauternes Finish is a cuvée of Mauritian rum, aged for 9 months under the sea to give it a unique character.
Made from a blend of equal parts rhum de pur jus and rhum de mélasse, this cuvée is aged for 12 months in Sauternes barrels. These Grand Cru Classé 1855 barrels come from Château Clos Haut-Peraguey.
The rum is reduced for 3 months before bottling.
The bottles are then immersed in an underwater cellar 60 meters off the coast of Ushant Island.
For 9 months, the rum benefits from almost total darkness, a temperature varying from 11 to 13°C, a total absence of oxygen and a pressure of 7 bars.
Nico's tasting notes
The nose is very mellow, well rounded and delicious, garnished with sweet spices like tonka bean and cinnamon, which bathe in a sweet vanilla syrup. A few orange peels bring a little variety and bitterness, while emphasizing the confectionery side.
With aeration, it is with a pleasant surprise that the orange peels become more and more pastry-like, especially as they are joined by raisins, candied fruits, like a cake batter generously enriched with rum and sweet spices.
On the palate , the spices are a little more lively than on the nose, which gives us a fairly lively attack on the palate. The worlds of confectionery and pastry meet in a full-bodied and tasty rum, balanced between light, tangy flavors and deeper, candied ones.
The finish continues to surprise with its depth, as the candied fruits and citrus fruits become increasingly heavy and exotic, while remaining very long-lasting on the palate.
