Germana Umburana artisanal cachaça, from the Sao Paolo region, is aged for 2 years in Brazilian cherry (Umburana) barrels.

Nico's tasting notes

The nose opens with soft, mellow vegetal notes and a bewitching scent of tonka bean. Rounding out this generous profile is a fleshy olive, tender and crushed but hardly salty. The aromatic power is coupled with a sense of authenticity and artisanal fermentation. This is a true local product, with aromas of spicy, fragrant cocoa.

With aeration, the tonka bean picks up again. The rum's fermented core and secondary aromas don't slip away, with a slight vesuvial tartness and a lovely spicy vegetal note to balance it out. We continue our journey into Amazonia with the humidity of the rainforest, like a hothouse smell, humus, damp earth, tropical undergrowth. Then hay and straw join black olive, so cachaça remains striking.

On the palate, the attack is very smooth but still aromatic. In a vegetal register, we find pepper and well-flavored fermentation. A hint of animal and musk takes us towards spices, with tonka bean more measured than on the nose, then tobacco and pepper again. A hint of coffee and candied botanicals, round but not sweet, bring a soothing edge and resonate with a compote of old fruits.

The finish is unique, still very authentic with its robust, olive-tinged fermentation. But it's still affordable; it's a charming, tame beast.
