This rum is made from pure Nkomazi cane juice , a local variety grown in the Mpumalanga River valley in northeastern South Africa , where the distillery is located.
It is produced through a double distillation process carried out in stills custom-made by the master distiller himself. The distillate (new make) is collected in small fractions, called cuts, and only the highest quality are then selected and blended.
The cane juice undergoes a long fermentation of 7 to 10 days , giving the product a remarkable aromatic intensity. It boasts a high congener content of 839.7 g/hlpa, including 614.6 g/hlpa of esters, a hallmark of its richness and complexity.
Jérémie's tasting notes
On the nose: notes of green mango, olive, brine and ripe sugarcane are present. A light veil of solvent accompanies the whole.
On the palate: the attack is direct yet rounded; it releases a carpet of fruit, with ripe mango and banana leading the way, accompanied by a touch of citrus. There's also a pleasant sweetness of ripe sugarcane, a hint of white pepper, and a light woody note. The overall impression then returns to sugarcane and fruit, including bergamot. With time, the green olive character becomes more pronounced.
The finish: fruity notes and ripe sugarcane, accompanied by white pepper.
