Introducing the 13th edition of the famous Boulet de Canon. This creation is the brainchild of Florent Beuchet, founder of independent bottler Compagnie des Indes.

This cuvée is based on the classic blend of the Boulet de Canon series. The blend is composed of molasses rums from Nicaragua and Panama, aged between 3 and 5 years in oak casks. Once blended, the rums were matured for 8 months in peated whisky casks before a final stage of hay smoking and 24-hour maceration.

The rum is bottled without cold filtration after reduction to 46°.

Nico's tasting notes

The nose is relatively light in the first moments, with notes of straw and hay that are still greasy and moist, revealing a certain freshness. This softly vegetal character is then enriched by fruity, then spicy notes, which could evoke an artisanal tequila.

With aeration, more smoky notes emerge, with nuances of tobacco, ash and slightly burnt resinous vegetation. The roundness of the rum enriches this smoke, giving it a softer, fatter, increasingly gourmand aspect.

The palate offers a unique, unprecedented delicacy of smoky, sweet, caramelized botanicals. In this vegetal roundness, we believe we find toasted cane, nuances of cooked sugar and molasses, as well as a surprising peaty, confectionery-like quality. The smoky hay reminds us of the herbaceous side of sugarcane, while mingling with the peat smoke, whose ashy side we forget.

The finish is relatively light, and not overly permeated by peat, leaving us to savor a cooked cane juice that flirts with mezcal.
