Les Chais Saint Eloi, through their Saint Eloi Spirits brand, select and bottle cane spirits from all sources.
This is one of the first pure cane juice rums from the Grays distillery. Located on Mauritius, this house distills molasses, and more recently pure cane juice.
This white rum vintage has benefited from a unique maceration and slow reduction process. This takes place in large Tuscan terracotta amphorae.
The amphoras allow natural micro-oxygenation.
For this edition, the rum has only been reduced very little since it was bottled at 60°.
