Distilled from pure cane juice grown on the estate, Chamarel Cœur de chauffe is a white rum with an assertive character. This cuvée is produced using a double distillation technique inspired by cognac stills, to reach the heart of the alcohol. The result is a beautifully balanced expression of aromas.

Nico's tasting notes
The nose is as close as possible to the raw material: more than a cane eau-de-vie, this is an essence of sugar cane. It is a delicious expression of the surrounding terroir, where bananas have not been left out. Distillation in a pot still brings its famous "pot still funk" (an aromatic extravagance far from a pure rum), a little something extra that adds roundness and richness. The nose is also floral, like a velvety, fragrant rose. The mellowness of cane sugar and the cottony comfort of barbapapa continue to flatter the senses.
Aeration awakens us from our torpor; the still has left a slightly metallic trace. The nose is now much more lively and lemony. To continue with this liveliness, some exotic acid fruits (passion fruit) and a slight pepperiness tickle our nostrils.
On the palate, the rum is very smooth and velvety. It's not overly easy, however, as the distillation process has retained some notes of fermentation (cabbage). The metallic (coppery) aspect is still present, and we can imagine the eau-de-vie flowing from the still. We're now in the heart of the cane, then we descend as close as possible to the ground with something earthy and truffle-like.
On the finish, the straw of the cane tingles the tongue like a sweet pepper. A little alcohol on the long finish.
