This vintage, named “Windward Islands Caribbean” by Saint Eloi Spirits, comes from Habitation Bellevue .
Located on Marie-Galante, which is nicknamed the Island of a Hundred Mills, Habitation Bellevue produces rum made from pure cane juice.
The aging and bottling of this rum took place in the Vosges, within the Saint Eloi 88 cellars .
Jérémie's tasting notes
On the nose : Notes of raisins held together by a fine and fairly straightforward oakiness with a honeyed side in the background.
On the palate : the attack is soft, round, and smooth, releasing aromas of candied fruit, banana, and peach, along with notes reminiscent of toasted grains, followed by a fresh, herbaceous character. All of this is supported by a noticeable oak influence that doesn't overpower the profile. Slightly peppery, spicy notes and a touch of bitterness reminiscent of orange peel are also present.
The finish : Quite long with a pronounced peppery note and subtle woodiness.
