Mana'o 3 years is a rum made from pure organic Tahitian sugarcane juice .
It benefited from 3 years of aging, carried out in ex-Armagnac casks, then in ex-Cognac casks after blending and reduction.
Jeremy's tasting notes
On the nose:
Floral and dried fruit notes immediately emerge. The oak provides a beautiful, structured, and elegant character. The tannins are present but already slightly integrated. The sugarcane expresses itself beneath a veil of acacia honey, enhanced by a hint of vanilla and a subtle mineral touch. A light freshness balances the whole. The spices remain mild, dominated by cinnamon and nutmeg. With aeration, the profile gradually evolves towards more pastry-like notes.
In the mouth:
The attack is round and warm, carried by a pleasant touch of freshness. The sun-drenched sugarcane expresses itself alongside citrus fruits, particularly lemon, which evolves into stewed flavors, enveloped in the acacia honey already perceived on the nose. A touch of gray pepper enhances the whole. Light roasted notes, reminiscent of milk chocolate, gradually emerge, accompanied by nuances of mirabelle plum and fig. The texture is smooth, offering a profile that is both indulgent and fresh, perfectly supported by a well-integrated oak influence.
As you taste it, the profile becomes more pastry-like. The nuts intensify, while cinnamon and nutmeg combine with deeper roasted notes, hinting at coffee. Despite this increase in richness, the wine retains a lovely freshness and a touch of acidity that provides excellent balance.
The final:
Quite long, it prolongs the citrus notes and the delicately tannic oak, now perfectly integrated. Present without ever dominating, the oak elegantly supports the whole, while a subtle mineral touch adds to the aromatic persistence.
