To produce this pink gin, Mirabeau scrupulously follows the production steps for a London Dry Gin.
This is a French gin made from botanicals and a neutral grape-based alcohol. It takes on its Provencal accent through the plants that make up the recipe: juniper berries, coriander seeds, iris and angelica roots, Menton lemon peel and zest, rosemary, thyme, bay leaves, lavender, May rose petals and jasmine.
All these plants grow wild on the outskirts of Saint-Tropez, not far from the estate.
