Mombacho 21 ans Sherry Finish has been aged for at least 21 years in ex-bourbon casks (burnt oak casks that previously contained bourbon) before being matured in Xeres casks.
Nico's tasting notes
The nose is divided between a sweet, vanilla-flavored rum typical of the Spanish tradition, and a much more intense rum. You can feel the influence of the sherry and its tannic, catchy cask, but also a pleasant concentration. All of which promises a good moment of contemplation. With a little aeration, the rum settles into its softer, chocolatey, sweeter side. The fruity side is provided by cooked, flambéed and caramelized banana.
The palate is surprisingly rich and concentrated. Whereas you'd expect it to be a little easygoing, this is a full-bodied rum, rather round but not sweet. Its fruity core flirts with stone, tar and even resin. It's reminiscent of a brandied prune, an old sherry, with a hint of walnut and cherry. Spices warm the mood a little more, molasses makes an appearance, it's like a fish in water.
The finish is greedy, with juicy oak and dried fruit, leading to a slightly pastry-like aspect.
