Montelobos - which means "mountain of wolves" - is a traditional mezcal produced in Mexico, and more specifically in Oaxaca, by agave expert Dr. Iván Saldaña.
This Mezcal is made from 100% organically grown espadín agave.
Agave hearts are harvested when ripe, then cooked in traditional stone ovens using pine wood.
Once cooked, they are hand-pressed in a stone millstone. The pulp is then fermented in open pinewood vats. Distillation takes place in handcrafted copper alembics heated over a wood fire.
This "mezcal joven" reflects all the know-how and tradition of the old producing families who follow the teachings of their ancestors.
