If you ask him, you'll quickly see that Eclipse is the pride and joy of the Mount Gay Allen Smith master rum maker, for its character, aroma and body.
Mount Gay Eclipse is a blend of all the existing varieties of Mount Gay rums. It thus represents a synthesis of the art of rum-making on the island of Barbados.
Mount Gay Eclipse is double-distilled before being aged in Kentucky oak barrels previously used to mature bourbon.
Nico's tasting notes
In brief: light - fresh - vanilla - caramelized woodiness
The nose is discreet and delicately lemony. It's light and vanilla-flavored, but retains a fresh edge with mint alcohol that joins the initial lemon. Everything is light and delicate, like the bitter oranges, then the blood oranges and the caramel, just blondied. The vanilla shelters a few spices like fresh nutmeg and cardamom.
On the palate, the rum is simple, light and sweet. The caramelized wood gives way to hints of vanilla and toasted, lightly salted nuts.
The finish opens the way to spices and even the heat of a chili pepper.
Charles Costa
An excellent rum that I discovered in Barbados.
I continue to enjoy it, despite its high price.
