After being aged for 6 to 8 years in American oak barrels, the rum was further refined for several months in sherry casks, adding character while retaining the authenticity of Caribbean rums.
Nico's tasting notes
The nose of this Bajan Rum (Rhum de la Barbade) is quite frank: toffee caramel, toasty woodiness and nuts, with toasted, caramelized walnut at the top. The coconut is buttery, very sweet and thick. It spreads over a nougatine of almonds, hazelnuts and peanuts. This powerful, full-bodied nose then softens to approach a mellow nougat, before a veil of very dark cocoa passes through to reveal the freshness of orange zest.
After shaking the glass a little and letting a few alcohol vapors escape, the rum falls back to a very dark caramel tinged with molasses. The core is much darker than at first, with roasted nuts and a burnt, caramelized woodiness.
The palate is light, smooth and creamy, reminiscent of a vanilla candy. Then the rum fleshes out with a salted caramel scented with coconut milk. The woodiness is toasty but rounded, like a slice of toasted sandwich bread drizzled with battery syrup.
The end of the tasting leaves us on a slightly smoky note, like a well-caramelized, vanilla-flavored bourbon.
