Papillon Influence Sauternes is made from a raw column-distilled white agricultural rum, made exclusively from red cane .
This is a blend of rums aged for three years . Its maturation consists of 80% maturation in ex-Sauternes casks and 20% in new American oak casks.
Production of this cask strength wine is limited to just 3000 bottles.
Jérémie's tasting notes
On the nose: Notes of cooked sugarcane, lily, greengage plum, candied yellow fruits, and raisins emerge, accompanied by a fresh, almost mentholated character. With time, a dry and precise oakiness, previously subdued, is revealed.
On the palate: The initial taste is fresh and sweet, despite a slight peppery note. It then becomes honeyed while releasing aromas of candied yellow fruits (peach, apricot), caramelized wood, and vanilla. The overall impression evolves into a rich cake-like texture, where the fruit and caramel are prominent, with a hint of cocoa. Over time, this rum becomes increasingly smooth and full-bodied from the very first sip, while the fruit notes become distinctly cooked.
Finish: Quite long, on a sweet and liqueur-like register, accompanied by the return of a peppery note.
