The “Des Champs d'Exploration” collection by Payet & Rivière consists of a pure cane juice rum and a traditional syrup rum.
This is the "Sur nos pistes" vintage of white agricultural rum .
The pure cane juice is extracted directly from the property's mill and comes from the R579 sugar cane variety.
From cane cultivation to pot still distillation, including crushing and then 7-day syrup fermentation , the entire process is carried out by Payet & Rivière.
Jérémie's tasting notes
On the nose:
The nose opens with fresh and expressive sugarcane. It quickly evolves towards an exotic register, dominated by mango, banana, and jackfruit. Milky notes from maceration add roundness, while a mineral backbone and a touch of fennel structure the whole.
In the mouth:
The attack is direct and precise, carried by a supple texture. The ripe sugarcane, rich in sugars, immediately asserts itself, supported by a delicate minerality. The mid-palate then reveals a fruity palette: citrus fruits, particularly grapefruit and lime, lead the way, followed by more subtle nuances of banana and green mango. The whole is enhanced by spicy touches of white pepper and freshly grated cardamom.
The final:
The lingering finish revolves around herbaceous and peppery cane notes. Fruit reappears in successive waves, prolonging the tasting, while a mineral and slightly iodine dimension lingers.
