Isautier maturé is a blend of traditional rums (distilled from molasses) aged in new barrels for at least 6 months.
Rhum Barrik can be enjoyed as a digestive. By pouring it into a glass that has been placed in the freezer a few minutes beforehand, the aromas will be magnified. It can also be used as a base for a mojito.
Nico's tasting notes
In brief: sweet spices - woody - fruity - vegetal
On the nose, we recognize the Isautier touch, both light and typically Reunionese, with a metallic hint. Vanilla quickly takes center stage, with a candy-like quality, followed by a fine, slightly vegetal woodiness.
Aeration opens the rum to a new, slightly licorice-like horizon, but above all fruity, with an apple that seems to emanate from young wood. A small incursion of cane juice, then the rum becomes both powerful and honeyed, quite radiant in the end. We'll need to give it time to reach equilibrium, for the wood to unfold and give it consistency.
On the palate, it's the same as on the nose, with the addition of spicy alcohol to shake things up a bit. Vanilla quickly takes over, along with licorice and aniseed, before the grain of the wood comes to the fore. The woodiness is present in both texture and aroma, leading to a rather enticing little nut.
In the end, we didn't think that this little nut that appeared at the last moment would take us to the side of popcorn or nougat.
