Père Labat Canne Jaune is a single-varietal white agricultural rum produced on the island of Marie-Galante by the Poisson distillery.
Jean-Cédric Brot, the distillery's owner, has chosen to produce an agricultural rum using only yellow cane. This almost forgotten variety is rarely used to produce rum, due to its very low yield. Nevertheless, it offers a cane juice with a high sugar content. This concentration played a significant role during the fermentation stage.
This rare rum has been produced in a limited edition of 3,500 numbered units.
