Privateer Navy Yard Single Cask P619 is a molasses rum distilled in the United States, more specifically in Ipswich, Massachusetts. This specific "Letter of Marque" selection for the Antipodes collection is a rum from Privateer Rum's Navy Yard series.
This rum was produced from molasses imported from Guatemala. This molasses, once mixed with water, at deliberately low and controlled temperatures, is fermented for 6 days with specific yeasts.
Subsequently, the must was distilled a first time in a pot-still, then a second time in an 8-plate column.
Aging was carried out in new American oak barrels of 53 gallons or 200 liters after reducing the TAV to 55°.
Cask No. 619 was bottled after 3 years of aging. Bottling is carried out without cold filtration and without any addition.
