Renaissance Distillery is a Taiwanese distillery producing rum on the island of Formosa, officially since 2017. It is the first rum distillery in Taiwan, where sugarcane has been grown for hundreds of years.

This Cognac cask finish 2018 Cask 18102, is the result of a long molasses fermentation that lasted 30 days. Distillation took place in April 2018 in the copper Charentais pot still owned by this young house.

Aging is tropical and lasted 4 years. Maturation took place in 350-liter new French oak barrels. The rum was then transferred to an old first-fill cognac barrel for finishing.

This cask, number 18102, was bottled unfiltered and unadulterated in May 2022. The rum underwent no reduction; it was smoked at 65° and aged naturally at 64.4°.
Bottling produced 346 bottles.

Nico's tasting notes

On the nose, it's the concentration of this rum that first strikes you. The generosity of the distillate, whose grand aroma style can be guessed, is absorbed, digested and magnified by a firm oak cask, free from tannins or too much roasting. The balance and conversation between these two forces is admirable.

With aeration, the woodiness becomes more imposing, more deliberate, provoking a certain sparkle of spicy freshness. It introduces something more vegetal, sometimes recalling the licorice aromas of molasses, but also the concentration of fresh, resinous aromatics, such as rosemary. With a little time, we come to appreciate a complexity that continues to develop, bringing out the fruit stones.

The palate offers the concentration announced on the nose, with remarkable coherence and unity. Toasted oak, very ripe exotic fruit, candied fruit, herbs, cane, sweet spices, etc., etc., follow one another relentlessly. A slight pear-tinged coppery aspect, and a woodiness so tender it becomes cereal-like, evoke whisky for a moment, then aromatic herbs and resinous plants take us back to molasses with a hint of brine.

The finish is long and savory, in a vividly pastry-like register where the vibrations of cherry pits resonate endlessly.
