Renaissance Distillery is Taiwan's first rum distillery. It produces rum from molasses and pure cane juice, officially since 2017.
For this Bas-Armagnac cask finish cuvée, the molasses was fermented for 20 days and then distilled in February 2018 in a copper Charentais pot still.
This rum was aged for a total of 4 years.
The first part of the maturation was carried out in a new Limousin oak cask, followed by a finish in a Bas-Armagnac cask.
Barrel number 18035 was bottled in April 2022, producing 483 bottles.
Bottling was carried out without filtration and without any addition. The rum has not undergone any reduction. It was barreled at 65° and its breeding brought it back naturally to 63.2°.
Nico's tasting notes
On the nose, we encounter a ripe, largely candied, big-aroma rum that seems to do much more than its age. Exotic fruits are caught in a golden spring honey, which has captured all the sunshine and exoticism of its native island.
Aeration brings us face to face with a striking concentration, where the fruit takes on a more serious, intense air. Forget the big aroma, we're back to our spring honey texture, which now takes on the air of sticky orchard fruit juices. The rum then continues to develop its complexity, between melted wood, sweet spices and vegetal milk.
On the palate, very ripe exotic fruit develops a typical acidity on the attack. This acidity is corroborated by a few lemons preserved in salt, which in turn take us towards green olive brine. Mellow oak quickly tempers the fruit's ardor, bringing a balm of sweet spice and licorice molasses. Its tannins are slightly coppery, like cherry pits or black berries with lively seeds.
The finish is peppery, roasted and deliciously woody, with dried fruit and kernels developing in the length.
