Ron de Jeremy Holy Wood Whisky Cask 21 ans is a piece of rum history. It comes from the famous Caroni distillery in Trinidad, which closed in 2002. This molasses rum was distilled in 1998 and spent the first 11 years of its ageing in the tropical Caribbean climate, in ex-bourbon casks. It was then transferred to whisky casks for a further 10 years of European aging. This single cask is one of the last of its kind, and has produced a total of 336 bottles.
Nico's tasting notes
The nose is flattered by a blanket of ripe yellow fruit, which coats the nostrils and takes us to a handful of scorched spices. The fruit then gains a little grain, which is soon accompanied by a slight oxidation. This brings to mind a slightly overripe melon, followed by cooked fruit such as plum, and finally a lovely tarte tatin.
Aeration brings us closer to a whisky cask, with a smokiness that introduces the famous Caroni touch. The tar is tempered, however, and blends well with the full-bodied fruit. It's hard to escape the clutches of this unique and charming profile.
On the palate, a fruity bubble first bursts on the tongue, then pours out flavors as round as they are full-bodied. The Caroni hydrocarbon notes are more mellow than ever, and are joined by the lovely flavors of a slightly smoky, marine whisky. The wood carries itself like a charm in the midst of all this, unfurling and bringing with it aromas of banana and papaya.
The finish is sweet and caramelized, with some roasted but still plump nuts.
