Like the 40° version, Saint Aubin Cœur de Chauffe Blanc 50° is distilled in the Pot Still at the Saint Aubin artisanal rum distillery. Only the "cœur de chauffe", i.e. the distillate from which the "head" and "tail" have been removed, is kept.
The result is a very aromatic, fine white rum.
Please note: we have several bottle formats in stock. The words "potstill distillation" indicate that this is the version distilled in a pot still, not the column version.
Nico's tasting notes
On the nose, fresh cane is exuberant, funky and colorful. At first, it carries tangy notes of strawberries and exotic fruit, still very fresh. Its vegetal character quickly establishes itself and drives out the tutti-frutti, it's a green cane, full of chlorophyll and hints of menthol.
Aeration lifts the very vegetal veil to reveal the roundness and delicacy of the sugar-coated cane juice. The power is well-regulated, with only the pepper tickling the nostrils, balancing the very mellow side of the vesou. A hint of lime zest bitterness adds the final touch of authenticity and rusticity.
On the palate, the attack is initially very round, vegetal and slightly spicy. The cane then unfolds with great fatness, but also with increasing warmth that invades the palate and warms the heart. The spices, especially pepper, increase in warmth and intensity. They make the cane vibrate ardently and take center stage.
The finish is rather dry, with the bitterness of lime zest and bagasse. The aromatic breadth is still there, even if the taste buds are quite constricted.
