Saint James Impérial Blanc Bio is harvested from a single plot of sugar cane. This plot has been cultivated for many years without the use of chemical inputs, which has earned it the organic label. This label is in addition to the AOC Martinique, guaranteeing us a rum that is 100% terroir. Distilled in a copper Creole column at the Sainte-Marie distillery, the pure cane juice is pressed when fully ripe, under the supervision of Marc Sassier, the company's oenologist.
