The aging of Santa Teresa 1796 rum is closely monitored by a “master rum maker”, Nancy Duarte.
It is she who is at the origin of this first expression of a collection that we could call Santa Teresa 1796 Cask Finished.
Produced in limited edition, this rum benefits from a specific finish. First of all, it ages traditionally like classic Santa Teresa rum.
It is only subsequently that it benefits from 13 months of maturation in ex-Speyside whiskey barrels.
This first batch opens the door to future limited editions.
Nico's tasting notes
On the nose , behind a falsely austere appearance hides a fairly elegant, light and clean rum, quite strongly imbued with whiskey aromas. The blend of the two worlds brings a delicious but fine woodiness, a little tense, as well as rather fresh orchard fruits.
With ventilation, we find a profile more faithful to that of the Venezuelan house. This is manifested by a soft caramel, skillfully measured, a white and vanilla woodiness, as well as some grilled nuts.
The palate is initially very caramelized, grilled, roasted, but without any astringency or feeling of dryness. The aromatic bias is supported by a very pleasant and balanced texture, without being sweet. A little touch of smoke sows confusion and brings a little extra that makes you want to repeat the tasting without delay.
The finish is calm and gently spicy, with caramel-coated nuts that slowly melt on the palate.
