SBS Guyana Savalle 2003 is a molasses rum from the mythical Demerara region. The Diamond distillery, the only one still active in the country, has brought together a number of stills from the region's defunct distilleries, and is thus able to reproduce many styles of rum from former plantations. Among these stills are the Savalle columns from the Uitvlugt distillery (closed in 2000). Formerly two double columns, they have now been combined to form a quadruple-column system capable of producing a wide range of styles, including the one we're interested in here, which bears the "SVL" mark.
This rum was distilled in 2003, and was bottled brut de fût over 17 years later, in February 2021. It is a single cask limited to 161 bottles.
Pauline's tasting notes
The nose opens with planty, herbaceous scents. On aeration, leather and woody notes emerge. A few esters quickly fade, giving way to burnt caramel.
On the palate, the attack is supple. The strength of the alcohol comes through in the mid-palate, with more caramelized flavors. The brown sugar evolves into more floral notes.
The finish is long. It lingers on notes of heather.
