Toucan Vaniliane is above all a pure cane juice rum which was distilled in Saint Laurent du Maroni, in French Guiana.
Gradually reduced to 45°, it acquired great sweetness thanks to the maceration of a large natural vanilla pod from Madagascar.
Nico's tasting notes
The nose opens with a vegetal, peppery cane character. The cane is there, with its fiber and bark. This first nose is typically agricultural, quite dry and above all fresh. Vanilla remains discreet at first, and is gradually introduced by a floral, sweet side, as the rum becomes mellower and sweeter. The vanilla begins to break through, but the vegetal character is still there, forming a fine balance.
If you let the rum air out a little, you'll be struck by its softness and the vanilla, which offers a cottony, comfortable sensation. A little lime adds a welcome acidity. The nose is round but balanced, very charming. The rum's still under the skin, it still has its agricultural side and hasn't completely melted into the sweetness of the vanilla.
The attack on the palate is smooth, with vanilla still in balance with the rum's aromas. The agricultural identity is still there, with bagasse and the liveliness of eau-de-vie. The vanilla makes a strong comeback on the mid-palate, with a full-bodied, natural feel that's very well done. Small citrus fruits tighten things up a little, in small touches.
The finish gives full expression to the vanilla, which is full-bodied and dark, almost woody.
