Like the white rum on which it is based, Saint Aubin Cœur de Chauffe Vanille is pot still distilled.
The pot still produces a particularly aromatic heart of toast rum.
Vanilla, grown on the Saint Aubin plantation, is macerated in this rum, aptly named "extra premium".
A vanilla pod is left in the bottle.
Nico's tasting notes
The nose is very mellow, like the heart of a full-fat vanilla pod. The cane is completely candied, but continues to express itself, and a fine balance is achieved. The vanilla is complex, not just round and plump. We can imagine its small black beans with powerful yet subtle aromas.
The palate is very smooth, with the first impression being of cane. The attack is thus marked by a very sweet, full-bodied rum, which combines with an equally sweet vanilla bean. The marriage is well-balanced, and there's never a hint of sugar or sweet vanilla.
