This is the second batch for this old Toucan from Guyana.

Nico's tasting notes

The nose opens with round, delicate woody notes of vanilla and light tobacco. The ripe cane is well candied, very tender and caressed by sweet spices. Fruity notes of candied citrus and ripe mirabelle plum.

Aeration gives the fruit basket a more candied air, and even advances the time, until we find dried fruits (apricot, mango...) barded with fine, delicate spices. The latter mark the return of our lovely woodiness.

The palate is soft and silky, and the ripe fruit glides like syrup over the taste buds. The wood adds extra mellowness, along with sweet, gourmet spices. The cane comes in at midpalate, escorted by a little pepper that adds just the right amount of warmth.

The finish is gourmand, vanilla, gently spicy and tenderly woody.

In comparison, the Toucan Vieux Millésime 2015 Batch 1 was very similar, with its characteristic delicacy and ripe, weathered sugarcane adorned with ripe fruit.

    On the nose 👃🏻 has a slightly buttery feel at first, with the aging in French casks clearly perceptible. It takes us on to generous, delicately woody notes of nuts. There's also a hint of white grape, vanilla, licorice and apple with a hint of lemon, bringing freshness. It's rather greedy and, on the face of it, not too dry. Cane pepper is also clearly perceptible. It's a product that still seems young, but there's already an interesting complexity settling in the glass.

    On the palate 👅: I've got a nice intensity here, with an aromatic profile that picks up pretty well on the notes we had on the nose. First vanilla, then nuts, a touch of white grape and a nice toasted bread edge in the mid-palate. The addition of a good note of pepper gives it a real kick. As the tasting progresses, the woodiness becomes a little more pronounced, more of an aged woodiness with a hint of nutmeg. The palate is round and the whole is reasonably sweet for my taste.

    The finish lacks a little length but remains interesting. It turns to white grape with a hint of licorice, then above all nutmeg and pepper, which clearly linger on the palate. With a certain bitterness but without being particularly dry for an agricultural rum 👌

    This Toucan Vieux shows complexity and intensity. It's a rum I really like, and well worth the asking price if you were wondering. I find it halfway between a good wood-aged rum and an aged rum that would have been aged in a tropical environment. I recommend it just as much as the unaged version 😊

    Good rum but slightly below the 2015 for my taste.
    On the other hand, the cork split in two during transport, so the bottle arrived with a slight leak, fortunately, but it could have been emptied.
