Ron Colon was born out of a South American tour by spirits professionals Thurman Wise and Pepijn Janssens. Having fallen in love with El Salvador, they wanted to bottle their experience of the country. As a symbol, they chose the Colón, El Salvador's ancient currency.

The duo chose a rum from the Licorera Cihuatan distillery as the blending base. This is a molasses rum fermented for 36 hours, and distilled in a multi-column complex. It was aged for 6 years in American oak casks. These barrels were blended by the house's cellar master, Gabriella Ayala. To add structure to this Ron Colon Dark Aged, a blend of Jamaican white rums (Hampden, Worthy Park and Clarendon) was added, along with a 3-year-old Worthy Park rum.
