A 1710 La Perle 2021 is a Martinican agricultural rum distilled and bottled at Habitation du Simon, in François.
This vintage is made from the pure juice of sugar cane harvested by hand and transported to the mill with the precious help of 2 mules (ChaCha and Pilibo). It is distilled in a Charentais copper still after a five-day fermentation. Each bottle is numbered.

Nico's tasting notes
On the nose , a flowery and fruity cane unfolds very generously in the glass to intoxicate us with a sweet and vegetal freshness. This first approach is superb, the cane brandy is as natural and striking as can be.
Aeration enriches the profile with a good handful of spices, with peppers ranging from gray to green. It also allows you to rediscover the depth of fermented cane juice, its slight acidity and its saline nuances.
The mouth is round and even oily, the cane is frank while being delicious. Its juice is both sweet and fiery, a nice balance is achieved between deliciousness and intensity. We are even surprised to find a pastry side, with a vegetable milk that leans towards sweet almond and which is overtaken by a stone side.
The finish is long, sweet, and displays some black and red fruit tannins.
