After the4th batch of the 2014 brut de fût vintage from the Bielle distillery, here is the 2016 vintage, also brut de fût.
This rum, produced on the island of Marie Galante, was distilled in a Savalle column still in 2016 and racked in 2023. The aging process, lasting 7 years, took place in the distillery's cellars in ex-bourbon oak barrels and in fine grain ex-jurançon oak barrels.
This cuvée was bottled without reduction or cold filtration.
Jérémie's tasting notes
On the nose : vanilla and caramel rise from the glass, with notes of candied citrus like marmalade, followed by honey. Over time, freshness and herbaceous notes, which were previously in the background, emerge.
On the palate : the attack is quite lively, releasing the sugarcane accompanied by spices (clove and pepper), with a subtle, lightly toasted oakiness. This all blends into notes of honeyed almonds, marmalade, cocoa, and other pastry notes. With time, the pastry notes become more pronounced.
The finish : quite long, with a peppery sugarcane note, supporting roasted notes and some candied citrus.
