Bozal Borrego is a traditional mezcal. It is produced in small quantities for personal consumption and local festivals. Production is usually done at the end of the year.
During the second distillation, a leg of lamb, seasonal wild fruits (strawberries, apples, pineapple) and cereals and spices (ginger, pecans, etc.) are suspended in a basket at the bottom of the still.
