L'Expérience is an overproof Guadeloupean rum, distilled from pure cane juice.
The fermentation, controlled over 24 to 36 hours, is carried out using local yeasts from sugar cane in Guadeloupe.
The Creole-style distillation produces a column still with 88% ABV and a TNA (volatile substance content) of 225 g/hAP .
The rum is then aged for one to two months in oak casks before being stirred and aerated. Gradual dilution and stirring are then carried out over four years, followed by mechanical plate filtration to preserve its full aromatic richness.
Jérémie's tasting notes
On the nose : Honey rises to the nostrils, sweet and warm, like sugarcane bursting with freshness. Then comes bagasse with a slight lemony bitterness, revealing some floral notes.
On the palate : the initial taste is smooth, fluid, and almost sweet. The sugarcane flavor unfolds in the mouth with a touch of mild spice; the heat is light considering the alcohol content. It's like chewing fresh sugarcane that becomes cooked, almost toasted, with notes reminiscent of cocoa and a few exotic fruits.
The finish : We retain the roasted notes over time and a little bit of fruit.
