English Harbour Port Cask Finish is a limited edition. This is the 5 year old (aged in bourbon casks) which has benefited from an additional 3 to 6 months maturing in very old port casks (over 200 years old!).
Each batch is numbered, as is each bottle.
The rum is not cold-filtered before bottling, to preserve all its aromas.
Nico's tasting notes
The nose is pleasant from the outset, with a profile that is fairly typical of the English style and very similar to that of Belize. On the menu, there's a touch of strongly roasted coconut, white wood with a hint of brown tobacco, then toffee with a hint of coffee. As orange peel provides refreshment, it's joined by dark, tannic prunes and molasses-roasted nuts.
Aeration reveals an even fuller-bodied, roasted side, with coffee and well-roasted nuts. At the heart of the rum, a concentration of beeswax and encaustic make it intense and brilliant. All these toasty notes are in fact a shell housing a vibrant core.
On the palate, this encaustic aroma swings between beeswax and more rounded medicinal notes. These aromas seem to come from a fine concentration of wood, offering intensity and a frankly savory side. Roasted nuts are drizzled with battery syrup and seasoned with a hint of salt, always in the direction of serious gourmandise.
The finish is relatively discreet, with a few hints of vanilla tobacco and toasted coconut.
