The second release in bottler Ferroni's 2024 Brut de Fût series comes from the Canary Islands.
This is a pure cane juice rum distilled in 2013 in a pot still and in a column. It benefited from an initial aging in the Canaries for 8 years in American oak barrels, ex-Canary wine (Malvoisie). The aging continued in Provence for 3 years in French barrels (ex-cognac and ex-rum).
Mediterranean breeding can be compared to tropical breeding. Indeed, the temperature variations (very hot and dry summers with cold winters) accentuate the angels' share.
