The second expression in the Brume Dorée collection, this vintage highlights a unique heating expertise, characterized by the injection of water vapor during the toasting of the barrels.
The rum was aged for over 10 years in American white oak barrels that had undergone this specific treatment, resulting in a smoother and more balanced aromatic extraction. Distilled in 2014, it is bottled at cask strength at 49.6% ABV.
Jérémie's tasting notes
On the nose: a generous note of vanilla accompanies a pronounced caramel character. Mango, candied fruit, quince paste, and apricot quickly establish themselves in this indulgent setting, supported by a woodiness infused with sugarcane juice. After a few moments of aeration, orange unfolds in a marmalade-like register enhanced with a touch of chocolate.
On the palate: the attack is lively, driven by notes of lightly cooked sugarcane that evolve into vanilla caramel. Kumquat brings a tangy freshness and a delicate zesty bitterness. With time, it reveals a more candied character, accompanied by sweet spices. The oak, present but subtle, elegantly structures the whole.
The finish: quite long, it prolongs the notes of vanilla citrus and caramelized sugar, with a lovely, lingering aftertaste.
