On the edge of Mount Pelée, where rain and lava have fertilized lands of rare richness, lies Habitation Bellevue, the birthplace of JM rum. Since the 19th century, this Martinique-based house has been crafting agricultural rums that carry within them the memory of their terroir. It is in this setting, where sugar cane soars in the face of the trade winds and draws its nourishment from volcanic springs, that this Single Barrel 2000 was born, bottled at 41.7%.

The principle of the single barrel – or single cask – takes on an almost heritage-like significance here. Each barrel, chosen for its uniqueness, bears witness to the intimate dialogue between rum and wood. For this 2000 vintage, a single piece of American oak was chosen, containing twenty years of patience and silent transformation. In the shadow of the cellar, to the rhythm of the tropical seasons, the alcohol has been impregnated with tannins, the breath of the wood, and slow evaporation, the “angels' share” that nourishes the walls and the legends.

Made exclusively from pure, freshly pressed cane juice, this agricultural rum boasts the authenticity of a process inherited from the planters. Distillation, carried out in a copper column, restores the aromatic finesse of the cane, while aging gives the spirit a unique depth, sealed in the character of the chosen cask.
