On the nose 👃🏻: the first thing I notice is a powerful note of strongly caramelized corn, a very sweet brown caramel at that. The woodiness is elegant and generous, practically playing itself out in the foreground. As aeration progresses, it asserts its presence and reveals more interesting notes of hazelnut. Here we have something powerful and extremely gourmand, like a well-baked, caramelized baked apple, with cinnamon and vanilla.
On the palate 👅: the attack is unctuous and rich in spices, carried on vanilla for a brief moment but above all on oak wood and cereals which express themselves well and for a long time. It's quite "concentrated", I find our brown caramel and then more particularly the nuts. Here, it's less sweet than on the nose, a little bitter but not too bitter either, since it's still delicious. The predominant note is clearly hazelnut, which becomes roasted and peppery as the tasting progresses.
The finish remains just as intense for a few moments on the palate. It's still lively and well-spiced, but drier here, with cinnamon and wood tannins that leave us with that very distinct nutty fruit side. Consistent from start to finish 👌
When I say "concentrated", it makes me think of a tight, aromatic and powerful coffee in terms of taste. I really like this dark but still gourmet side, with the nuts apparently typical of Knob Creek products 🥃
