This bourbon, distilled at the small Illinois distillery FEW, is made from corn (70%), rye (20%) and malted barley (10%).
The eau-de-vie that leaves the still has a strength of 67.5°. It is put at 57.5° in new American oak barrels from Minnesota, for a little less than 4 years.
The bourbon is bottled at 46.5° from a small quantity of barrels (small batch).

The color is amber, with many fine, rapid tears lining the walls.
A dense, flowery nose. Jasmine, honeysuckle and violets, what fragrances! Logical evolution to fudge, nutmeg and black pepper. More deeply, and because a slight oxygenation allows it, notes of toasted bread and butter emerge. A touch of blond tobacco and leather.
On the palate, it's soft and round at first, then quickly floral and spicy. The nose translates perfectly on the palate, again with flowers, violets and lavender (which underpin the entire structure), caramel and, before long, notes of burnt barrel, toasted bread, tobacco and leather.
The finish is of good length, with lavender and tobacco. Sweet floral bitterness.

Really good bourbon and I've tasted 6 different ones lately.

On the nose 👃🏻: the first impression is of rich oak wood, accompanied by syrupy caramel, almost reminiscent of maple syrup. The spices vanilla and cinnamon are also present, then a touch of wood roasting appears after a few minutes. It's gourmet, like a fine cracker.
On the palate 👅: the greediness clearly continues here too. The oak is still marked and nicely melted. It's unctuous and moderately spicy. I find cinnamon with a nice intensity, as well as cherry pits and almonds. Subsequent sips take us more towards notes of roasted hazelnuts.
The finish is long on these notes of spicy nuts. The sweetness remains fairly high and there's a butter cookie side to the finish 👌
Verdict ⚡️: Few Bourbon makes no secret of its deliciousness. It's not very complex because of its youth, but it's a delight to taste, rich and balanced, with a lovely finish for such a reasonable alcohol level.
