Produced in 2021, this South African rum is a pure “high ester” cane juice which comes from batch 2021HE2. It is distilled in a pot still after a long fermentation of 22 days. The dunder is used in the dilution of the cane juice up to 30%. These parameters contribute greatly to the aromatic power of this eau-de-vie.
No reduction goes into the manufacturing process of this rum which is bottled raw still.
