Paranubes anejo 53.8°: Description and customer reviews

Paranubes añejo is a pure amber cane juice rum. It is produced in Mexico, in the town of Huautepec, in Oaxaca, in the south of the country.

This rum is aged for 18 months in American oak barrels, then bottled without reduction.

You can find details of how the white rum that has been aged is made here.
The varieties of cane used to distill white rum are: Tipico, Dura, Negra and Criollo.

Nico's tasting notes

On the nose, we find the singular identity of Paranubes eaux-de-vie, with very velvety, sweet vegetal accents that veer towards ripe tomato, even ketchup sauce. Here, the sauce becomes spicier, slightly woody, and enters the realm of barbecue sauce.

Aeration reveals a full-bodied raw sugar, still full of molasses and toffee aromas. The white woodiness also brings a sensation of sweetness, with full-bodied, almost milky white nuts and pretty spices with hints of cigar box.

The palate is a concentrate of ripe cane, held in a sheath of exotic wood and spices. Roasted nuts provide delicious roasted flavors on the mid-palate, and join a peppery cane whose flesh is almost smoky.

The finish is very bourbon-infused, with sweet, toasty cereals and a veil of vanilla that builds into the length.

"Despite its relatively young age, the quality of the casks gives this cane brandy a beautiful patina..."
