Père Labat Clos Parcellaire La Salabotte is a white agricultural rum originating from the island of Marie-Galante . It is the second exploration of the Marie-Galante terroir after the Clos Parcellaire Les Mangles cuvée.
This rum comes from a single plot of land on the property where the Poisson distillery is located. The "La Salabotte" vineyard, planted entirely with white sugarcane , has volcanic soil characterized by rich, fertile black earth. The fresh sugarcane juice underwent a 5-day fermentation before being distilled in a Creole column still.
This vintage is bottled on site in a limited edition of 3,500. Each bottle is numbered.
Jérémie's tasting notes
On the nose : fresh sugarcane, coconut water and a damp meadow aspect, with a hint of fruit reminiscent of kiwi, accompanied by a saline note.
On the palate : the attack is on the sugarcane diluted in coconut water, before releasing herbaceous, almost floral notes, licorice and a hint of bitterness reminiscent of grapefruit.
The finish : long, with herbaceous notes and that fruity bitterness reminiscent of Timut pepper.
