This Plantation Fiji Island rum comes from the only distillery in the Fiji archipelago. The German distributor Kirsch Import is behind the selection of cask #4 of the “Single Cask 2023” collection.

Distilled from molasses in a Pot Still at Rum Co. of Fiji, this rum is from the 2017 vintage.
It has benefited from traditional double aging at Plantation. Initially, it spent 4 years in the tropics in ex-bourbon barrels, then 6 months in cognac barrels once transferred to the Ferrand cellars.
But his journey does not stop there: he was then rewarded with an 18-month finish in Ironroot Republic “Promethean” ex-bourbon barrels. This latest barrel comes from a barrel swap with the Ironroot craft distillery located near Dallas, Texas.

Jérémie's tasting notes

On the nose: an intense and expressive nose, marked by vinous aromas and slightly oxidized red fruits. With aeration, notes of honey and vanilla enrich the aromatic profile, accompanied by hints of ripe pear and green almond.

On the palate: the attack is soft and silky, carried by delicate oak and slightly earthy nuances reminiscent of certain peaty whiskies. The flavors of ripe tropical fruits gradually gain in intensity before giving way to a delicately peppery quince paste, subtly enveloped in honey.

The finish: long and structured, it sees the fruit gradually give way to elegant oak and sweet spices. A fine citrus acidity brings freshness and balance, while a slight bitterness reminiscent of fresh walnut pleasantly prolongs the tasting.
