Privateer Navy Yard Single Cask P619 is a molasses rum distilled in the United States, more specifically in Ipswich, Massachusetts. This specific "Letter of Marque" selection for the Antipodes collection is a rum from Privateer Rum's Navy Yard series.
This rum is made from molasses imported from Guatemala. This molasses, once mixed with water at deliberately low, controlled temperatures, is fermented for 6 days with specific yeasts.
The must was then distilled once in a pot-still, then a second time in an 8-tray column.
Aging took place in 53-gallon (200-liter) new American oak barrels, after reducing the TAV to 55°.
Barrel N°619 was bottled after 3 years of ageing. Bottling is carried out without cold filtration and without any additives.
