This "Very Old" is distilled in copper column stills, and aged in French oak barrels. It is a blend of rums that are all at least 3 years old (and more than 6 years old in some cases).
Nico's tasting notes
The nose is very woody, with dry, roasted notes of walnut and roasted chestnut. The well-balanced cane gradually reveals itself until it takes its rightful place. It is carried by a light, mellow pepperiness. In the same vein as the first moments, peanut, walnut and even argan oil once again reveal a dry, rich profile. The powdery nose is reminiscent of nuts whose aromas have been exhaled by roasting.
When the rum is shaken a little, the profile remains similar, but more precise and acute. There's no explosion of alcohol, and the nose remains honest. The spices are fine, joined by dried apricot and a hint of prune. The wood now seems to have turned to golden wax. Yet the rum retains a youthful quality that keeps us coming back to the cane. With rest, the mellowness of toast takes over.
On the palate, the attack is soft and woody, with a very pronounced pepperiness, very honeyed, very successful. This is followed by a bevy of dark, jammy fruits. These include morello cherry, nectarine and plum. A few salty hints later, candied fruits fuel the sweetness. This rum is tasty, but could perhaps do with a little more intensity and spiciness.
The finish remains woody and honeyed, coating the taste buds and leaving a hint of licorice on the way out.
