Ultimatum Infinitum 12 is a blend of molasses rums from a Dutch bottler. 4 countries are represented(Guyana, Trinidad, Barbados and Jamaica), with 8 distilleries and 12 different rums! This blend is reminiscent of the British Navy blend, distributed daily to sailors until 1970.
The youngest rum in the blend is 12 years old, and no additions have been made.
Jérémie's tasting notes
On the nose: overripe fruits, pineapple and jackfruit, accompanied by a slight hint of solvent, medicinal and milky notes. The nose is initially dominated by Jamaican and Demerara profiles. With aeration, a more floral register unfolds, evoking jasmine and acacia, supported by light notes of vanilla honey and caramel.
On the palate: the attack is direct, yet relatively gentle, with floral notes and subtle oak, enveloped in cane honey. The oak then becomes more assertive, lightly toasted, contributing a delicate caramel that evolves towards mocha, before giving way to candied fruit, ultimately less prominent than the initial nose suggested. The finish reveals herbaceous and balsamic notes. Over time, the profile gradually evolves towards vanilla caramel, relegating the fruit to the background.
The finish: of medium length, it opens with relatively discreet notes of overripe and candied fruit, accompanied by herbaceous touches, all carried by a slightly roasted woody framework.
