From Velier's "Spirits of Haiti" range, this 8-year-old Casimir 2018 exemplifies the richness of aged Haitian clairins. Produced by the Casimir artisanal distillery in the Baradères region of southern Haiti, it is made from locally grown Hawaiian sugarcane .
Its spontaneous fermentation in wooden vats, followed by distillation in a pot still , gives it an authentic profile, marked by its terroir.
Aged for 8 years under the tropical Haitian climate in an ex-Caroni cask (cask no. CA17CR-7), this old clairin develops a remarkable aromatic complexity.
