Distilleria Capovilla embodies Italian craftsmanship in the world of spirits. Founded and managed by Vittorio Gianni Capovilla , it has established itself as a global benchmark thanks to a tireless pursuit of purity and authenticity. A former mechanic turned master distiller, Gianni Capovilla is today recognized as one of the greatest artisans of contemporary distillation.
The story begins in 1974. After gaining extensive experience in the winemaking machinery sector and traveling in Switzerland, Austria, and Germany, Capovilla purchased his first still in Austria and produced his first grappa in 1975. Since 1986, he has been fully at the helm of his Italian distillery, driven by a constant ambition: to achieve organoleptic perfection . Every step—from selecting the pomace to fermentation, from distillation to reduction—is meticulously designed to preserve the integrity of the raw material. This commitment has led him to file several patents throughout his research.
Driven by an almost irrational passion for fruit, Gianni Capovilla tirelessly travels the Alps, the Asiago Plateau, the slopes of Vesuvius, the Venosta Valley, Champagne, and even Romania, in search of rare, heirloom, or endangered varieties. Williams pears, wild cherries, exceptional grape varieties, or Amarone pomace: each fruit is selected with meticulous care. This nomadic quest is the secret behind his single-varietal distillates, which intensely express the unique character of each terroir.
The distillery's facilities, designed by Capovilla himself and built by Muller, reflect this artisanal philosophy. Separate lines are dedicated to the fermentation of the fruit and pomace, with 150- and 400-liter bain-marie stills, 300-liter pot stills, and small boilers specifically designed to enhance the aromas. This technical precision results in grappas and eaux-de-vie of absolute purity, without any additives.
Among its signature creations are Amarone grappa, Williams pear distillate, and Rhum Rhum Liberation rhum agricole, produced in Marie-Galante in collaboration with Luca Gargano and the Velier distillery. Aged in Guadeloupe, this rum exemplifies the house's international outlook and innovative spirit.
Each bottle is a true work of art: laced, waxed, and sealed entirely by hand. The handwritten label mentions the type of fruit, the harvest year, and the individual bottle number, highlighting the unique character of each vintage.
